S’mores Bars with Marshmallow Creme

I posted these S’mores Bars on Instagram and got SO many requests for the recipe, so here it is my friends. We’re no stranger to S’mores recipes here on the blog with this delicious ice cream version or these S’mores Sandwich cookies. It has been a rainy few days in Boston making it difficult to roast marshmallows and make your traditional S’mores. This is our typical “treat” this time of year. When both boys came home sad on their last day of school, we baked our blues away! At first my idea was simply to cut up marshmallows but that didn’t seem like it was going to melt together very well so I started researching homemade “fluff”. The stuff out of the jar has some yucky ingredients and it’s far too simple (only 5 ingredients!) to make it from scratch. Yes it took longer. But it does tastes better and you have enough use in other recipes.

INGREDIENTS

2 Cups All Purpose Flour

2 Cups Ground Graham Crackers

1 tsp Baking Powder

1/2 tsp Salt

1 Cup (2 Sticks) Unsalted Butter, Room Temperature

2 Large Eggs

1 1/2 C Packed Brown Sugar

Homemade Marshmallow Creme (recipe below)

1/2 C Dark Chocolate Chips (I used baking chips chopped)

Marshmallow Creme

1/2 C Granulated Sugar

1/2 C Corn Syrup or Agave Syrup

1/4 C Water

2 Egg Whites

1 tsp Pure Vanilla Extract

INSTRUCTIONS

Marshmallow Creme:

I used my hand mixer because I had it out already but you can easily use your stand mixer with whisk attachment.

In a saucepan bring water, corn syrup and granulated sugar to a boil whisking to dissolve the granulated sugar. If you have a candy thermometer you are looking for 240 degrees F and no higher. I don’t actually have one so I let my mixture boil for a minute or two and then took it off the heat.

Meanwhile beat your egg whites until they form soft peaks. Dribble the hot syrup mixture slowly down the inside of the mixing bowl into the egg whites while beating continuously. This helps avoid curdling from the heat of the syrup.

Once the sugar is entirely incorporated, continue to beat your marshmallow creme for 5-7 minutes until you have a thick, glossy marshmallow creme. It’s delicious and not as scary as it sounds. Set aside while you make the base for your S’mores Bar.

S’more’s Bars

Preheat oven to 350 degrees F and line a 9 x 13″ baking dish with parchment paper or tin foil overlapping the edge. In a small mixing bowl combine your flour, graham cracker crumbs, salt, and baking powder. Set aside.

In a large mixing bowl beat your butter and brown sugar for a minute or two until light and fluffy. Add your eggs and mix to combine. Next add in your dry ingredients and mix just to combine.

I used a little more than half of the the dough to line the bottom of my pan and using my fingers pushed it into a solid layer over the parchment paper. Next grab that delicious homemade marshmallow creme and generously cover the bottom crust layer about 1″ or more thick. Add roughly chopped dark chocolate or chocolate chips on top of the marshmallow creme. Crumble the rest of the dough over the top of that. I topped the whole concoction with a few tablespoons of crushed graham crackers I had left from the crust.

Bake at 350 degrees F for 30-35 minutes until golden brown. Let cool in the pan completely before you lift the bar out of the pan to cut into pieces.

And enjoy! My goodness are these a crowd pleaser. The boys loved them and I hope you do too!
