Spring Strawberry Salad

I hope you all had a lovely Easter and Passover season! The weather is beautiful here in Boston and as I write this, my garden office doors are wide open and the Daffodils are bobbing in the breeze. Now Strawberries are also beautiful this time of year and the star of this Spring Strawberry Salad. From a fresh strawberry vinaigrette to strawberries slices in the salad, they take centerstage.

I had to search my own blog to see if I have ever put up a Spring Strawberry Salad recipe. How have I been at it this long and not? It is true friends, I have my favorite Kale Ranch Salad and a Harvest Salad but strawberries haven’t made it so far. So let’s change that. This homemade strawberry vinaigrette is delicious and deserves a spot on the blog.

FOR THE SALAD

Grab some kale (always my favorite cruciferous green), fresh strawberries, cucumber for the crunch, roasted (and salted!) pumpkin seeds (crazy high in iron, you need these bad boys in your diet) and a handful of goat cheese. Rinse, pat dry and hand tear the kale. Slice up the strawberries and cucumber and put it all in a pretty bowl. Because salads are that much better in a pretty bowl! Side note: mine are handmade by Wonki Ware in South Africa. Local friends, Serena and Lily in Chestnut Hill always carries a lovely selection but I found these ages ago at a small home store in my favorite seaside town of Newburyport.

FOR THE STRAWBERRY VINAIGRETTE

8 Strawberries

3 Tbsp Raw Honey

3 Tbsp California Olive Oil

Zest and Juice of 1/2 a lime

3 tsp Apple Cidar Vinegar

1/8 tsp Salt

Some fresh herbs (I used a few sprigs of basil but I’m curious about mint)

 

Blend up all ingredients up in the food processor. I love this one because it’s a mini version and fits better in my cupboard. Taste and adjust to your liking.

Pour this delicious vinaigrette over your salad, store the rest in your refrigerator to maybe share with your partner in crime when they get home from work. And if this doesn’t float your tastebud boat, head on over to my friend’s posts on this spring salad blog hop.
