Crunchy Kale Avocado Toast

One of my favorite easy and healthy meals is crunchy kale avocado toast. I make it at least once a week for lunch and in the summer when my garden is brimming with heirloom tomatoes, I throw slices on top. But we’re in the dull drums of winter and right now it’s just kale cooked to crunchy perfection. Kale is a favorite of mine, you can find it in this recipe too.

I love all the varieties of kale. Lacinato kale is the flat leaf kale and last summer I even grew purple curly kale. There are so many delicious varieties, pick up what you’re able to find at the farmers market or local grocer.

INGREDIENTS

1 Avocado (I use half an avocado and save the other half for another day if I’m cooking just for myself)

3-4 Kale Leaves (*Kale shrinks down quite a bit when cooking, you’ll need more if making additional servings.)

1 Garlic clove, peeled and finely chopped

2 Slices Seeded Bread (I love Killer Dave’s seeded thin slice bread)

Flake Salt & Freshly Ground Pepper

Olive Oil

 

INSTRUCTIONS

Start by prepping your ingredients. Peel a garlic clove and finely mince. Wash kale leaves thoroughly and pat dry. Tear leaves into small pieces and place in a sauté pan. We’ve switched to using our cast iron cookware almost exclusively. Made in the USA and lighter than some of the other versions, these are my new favorites. Make sure the leaves are dry because wet leaves in olive oil cause the oil to splatter. Slice your avocado all the way around and twist to separate. Remove avocado seed and sprinkle an avocado half with flake salt.

Using a fork, mash the avocado in the shell. This saves you having to wash a dirty bowl. Add the mashed avocado to your toasted bread and set aside.

Drizzle the finely torn kale liberally with olive oil and as it cooks and shrinks down, add the minced garlic. I tend to do that towards the end as the garlic browns so quickly. Garlic is a great immune booster and adds so much flavor to this simple dish. When its crunchy and some pieces lightly browned I remove it from heat and top the avocado with large scoops.

Dress your toast with a sprinkling of pine nuts, a drizzle of olive oil, flake salt and freshly ground pepper. And enjoy!
