Pink Summertime Sips

It’s officially summer in this neck of the woods now that the kiddos are done with preschool. We’re loving the loooong evening light and outdoor play. Now we don’t have a pool (unless you count the mud pit the boys have made with the hose) but a girl can still dream, pink drink in hand. I’m joining my blogging buddies for a Pink Poolside Drinks blog hop so you’ll be well equipped the next time you need an excuse to sip something yummy. Now it just so happens that I was in Trader Joes the other day and the nice man in the wine area was doling out samples of this delicious peach bellini stuff. Why yes I did come home with two bottles. Haha! Sooo, the base of this yummy drink is that happy peach bellini bottle from Trader Joes. I got to work “jazzing” it up just a wee bit more but holy moly it’s delicious straight out of the bottle into your mouth. Ok maybe get a glass.

I grabbed a bag of blood oranges because their sunset interiors and delicious sweetness scream summer to me. I juiced one blood orange per glass to add a fresh, citrusy taste. I also don’t love strong drinks so this was the perfect way to “dilute” it a bit. Prior to pouring in the blood orange juice, muddle several sprigs of a fresh thyme.

Add the blood orange to the muddled thyme and pour the sparkling peach bellini goodness right on over the top. Garnish with a few more sprigs of fresh thyme and some blood orange slices. Ahhh. It’s almost like you can’t hear the baby crying or the boys shooting each other in the face with the hose.

Yum. A fresh taste of summer if I do say so myself. And because Trader Joes really sets the stage for this deliciousness it’s also quick and easy. The perfect way to entertain friends.
